These berries come from China, where they have been famous since ancient times. Sichuan red berries have a powerful and very aromatic flavor. Their floral and citrus notes (orange peel, bergamot) go perfectly with savory dishes such as duck, fish, pork or chicken. Sichuan pepper is also perfect in desserts: chocolate dessert, fruit salad made with citrus, apricots, melon… We advise you to grind them finely, at the last moment in the Peugeot steel pepper mechanism and avoid cooking which tends to develop bitterness. They can also be infused.
